[RECIPES] White Chocolate Macadamia Nut Protein Cookie Bars

Chunky White Chocolate Macademia Nut Protein Cookie Bars

You cannot go with a simple and fun cookie bar recipe that is loaded with sweetness, texture, protein, fiber and energizing ingredients.ūü§ó

Materials: oven, baking pan, medium & large bowl, whisk, sift

Serves 3-4 


Ingredients&Directions

  • 3/4 cup coconut flour
  • 1/2 cup unsweetened coconut milk¬†¬†
  • 1/2 cup white chocolate baking chips
  • 1/4 cup macadamia nuts (chopped)¬†
  • 3 eggs (room temperature)¬†
  • 2 tbsp vanilla bean protein powder¬†
  • 2.5 tbsp butter (melted)¬†¬†
  • 1.5 tbsp erythritol¬†¬†
  • 4 tsp arrowroot flour/starch¬†¬†
  • 1 tbsp maple syrup¬†¬†
  • 1 tsp vanilla extract¬†¬†
  • 1 tsp baking powder¬†¬†
  • 1/2 tsp baking soda¬†¬†

Matcha protein frosting: 

  • 2 tbsp vanilla bean protein powder¬†¬†
  • I tbsp unsweetened coconut milk¬†
  • 1.5 tsp Teatis Tea AWAKE Matcha powder¬†¬†
  • 1.5 tsp confectioners sweetener¬†¬†

 White chocolate drizzle:  

  • 1/4 cup white chocolate baking chips¬†¬†
  • 1.5 tsp unsweetened coconut milk¬†
  • ¬†1 tsp confectioners sweetener¬†


Directions

- Preheat oven to 350¬įF and line an 8x8 baking pan with parchment paper. Set aside.

- In medium bowl, whisk and sift: the coconut flour protein powder, erythritol, arrowroot, baking powder and baking soda.

- In a large bowl, combine: the unsweetened coconut milk, melted butter, vanilla extract, maple syrup, and the eggs.

- Transfer the dry ingredients into the large bowl and blend everything together.

- Fold in the white chocolate baking chips and chopped macadamia nuts.

- Spread the batter into the prepared baking pan. Use hands to pat the mixture flat.

- Bake for 20-25 minutes or until slightly golden on the sides.

- Cool for at least 15 minutes.

- Once cooled apply the protein frosting.


For frosting:

- In a small bowl, warm the coconut milk and stir in the Matcha powder, protein powder, and confectioners sugar until well blended.

- Use a rubber spatula to evenly distribute the frosting onto cooled bars.

- Allow the frosting  to set for about 10 minutes.
