Bell peppers are recommended vegetable to eat for people with diabetes. The ADA says "Eat more!" the non-starch vegetables like bell peppers.

One thing to keep in mind about sweet bell peppers, is the sweet. They do have naturally occuring sugar, more than 2 grams per serving. Red bell peppers are the sweetest. They stay on the vine the longest, getting sweeter and redder as they do. Green bell peppers have the least amount of sugar.
- 6 large Bell peppers
- 3 tbsp Olive oil (divided into 2 tbsp and 1 tbsp)
- 1/4 tsp Sea salt
- 1/2 large Red onion (diced; ~1 cup)
- 1 1/2 lbs Ground turkey
- 3 tbsp Taco seasoning
- 3/4 cup Water
- 1 14.5-oz can Diced tomatoes (drained)
- 2 cups Cheddar cheese (shredded)
